How do i know if i got the right exposure.

I modified a 50mm 1.9 lens (I paid 20 bucks) to fit the Nikon F mount. It is a Porst Color Reflex and my camera is the D3100, it has a split mirror for MF. So, i have no metering, nothing really to help me out. And I'm also using flash in manual mode. How do I know if I got the exposure right? Is there any good method? Took the picture at max aperture and flash bouncing to the back. And I own the 35mm 1.8g, so don't tell me to buy a AF lens. I just want to learn stuff. [EXIF data available. Is there a noticable difference between printing at 225dpi as compared to 300dpi. I have a 16mp mirrorless camera right now but There are many cheap great old digital cameras available at the 12mp range and I can't imagine myself ever needing to print larger than 13 by 19. If I wanted to do that I'd just use my Pentax 67

So, I took a few sunrise shots this morning, and anything I did to them made them look overcooked. It made me start thinking: >When is an image overcooked? I realize that there's no 100% cookie cutter answer to this, but what are some of the guidelines y'all go by? As a bonus, what is the difference between a photograph being stylized and overcooked?
