Op use material ID's, not map channels, to assign different sub materials to different polygons of a mesh, it's in the modifier stack.
multi UV channels are used when you need UV sets that overlap each other and have different orientations.
Like say you have a concrete wall and wanna add damage to the edges or a decal with some graffiti, that's what auxiliary UV-sets/map channels is about.
