I dunno, gave this nice retro feeling, it's like watching a text book from the 80's showing a software from the 21st century (well not really, max looked about teh same in the 90's but ya know).

Op use material ID's, not map channels, to assign different sub materials to different polygons of a mesh, it's in the modifier stack.
multi UV channels are used when you need UV sets that overlap each other and have different orientations.
Like say you have a concrete wall and wanna add damage to the edges or a decal with some graffiti, that's what auxiliary UV-sets/map channels is about.
