Getting a lot of mixed answers from google about this. Do you guys soak or your lentils or just rinse them prior to cooking? I've read they aren't as hard on you as beans so there's no need to soak them but a lot of people still seem to recommend it.

Do you guys soak them or not? And what are some good foods to mix them with, while I'm at it?

Lentils I rinse but I don't soak, they cook fast enough.

i dont even rinse them..... i guess i should start doing that.

I have a really simple lentil soup recipe.

1 can of Hunt's diced tomatoes with garlic, basil, and oregano

2/3 cup of lentils
1 medium onion
2 to 3 celery stalks
small handful of baby carrots
lil olive oil

simmer until lentils are soft.

i grade some parm to sprinkle on top if I have it on hand

GOAT lentil salad-

1 lb bag green lentils
2-3 cloves garlic
2 bunches green onions
1/3 c EVOO
1/4 c (or to taste) sherry vinegar, or red wine vinegar if sherry v. unavaliable

rinse/sort lentils (i generally find at least 1 small pebble in each bag of store brand), cook at simmer for 20 min, blanch in cold water. mince garlic, chop green onion, toss all together in bowl. Decent warm, even better chilled in fridge for a couple hours. Keeps well

This, but cook diced carrot with the lentils, along with a bay leaf. If you're feeling extravagant top with a very little bit of crumbled bacon (like 1/2 slice).

You're supposed to rinse them. They will dissolve if you soak them, lentils soften up fast.

They won't dissolve if you soak them, they'll just take less time to cook after.

You don't have to soak any beans, though. I cook most of my beans while they're dry and unsoaked, they always come out fine. Just need some more water and time.

They're thin enough that you don't need to soak them; they cook in 20 minutes even when dry. My main legumes are black beans and chickpeas, but when I forgot to soak some, I bust out the lentils

Just cooked a pound of them tonight. Rinsed them just in case there were pebbles mixed in, let them simmer in 6 cups of water with salt and pepper for about 25 minutes and they were done. Still firm.

Mixed in some sauerkraut, sliced kielbasa, diced shallot, garlic, and a splash of white wine once the boiling liquid cooked away. Let it simmer for 5 more minutes and I ate two bowls for dinner.
