I'm an /out/doorsman and have been doing a bit of fishing lately. My freezer is getting pretty full. Walleye, bass, trout, salmon, etc. What are some good ways to prepare them? I've been baking, grilling, and deep frying with light seasoning but I'm looking for something different.

I like Veracruz style. Walleye is my favorite fish.

I've already smoked suckers and salmon. Have also pickled suckers as well.

I have not. Any good recipes?
