A vegetable is basically any non-sweet edible plant part that isn't an herb, spice, or grain. Although under certain circumstances all of these will be called vegetables.

The whole "x is a fruit not a vegetable" thing gets really really old.

Cook them any other way then mash them. I don't see why you need to do this, but it's pretty simple. Might need to add a bit more liquid in the form of cream/butter/milk/etc during the mashing though since there's no absorbed water from boiling to tenderness.

Not all vegetables should be treated the same. It's commonly accepted that when you make mashed potatoes, you will be boiling the potatoes. Most people avoid boiling other vegetables, though, because you lose some of the nutritious parts of the food because they leach into the water, and then they can easily be overcooked to mushy, tasteless sadness. Steaming retains everything better (flavor, nutrients, etc., though it can be overdone as well, too).

One of the big reasons not to boil veggies is to keep the nutrients. Potatoes have none. It's just starch. Boil to your heart's content.

Also, when considering making a soup, boiling the veggies is just fine, as it will all go into the broth.

boil green vegetbles very briefly to preserve their colour then cook them through in fat, don't boil them for a long time.

boiling does different things depending on the vegetable. some of them lose all their flavour when boiled in water, others lose more of it in fat.

nothing wrong with boiling potatoes to cook them for mash. all you need to do is break them down. just make sure you drain them well afterwards.
