It isn't a salad plant. It's a cooking plant. The young shoots are poisonous when not cooked. The berries and roots are deadly. The younger it is the less toxins it has.

In north america, there are only like 8 or 9 plants that are deadly if ingested

there are something to the tune of 40 that will upset your stomach

everything else (hundreds of species of plants) is completely edible. maybe not tasty, maybe not nutritious, but edible.

Good pics. Yes, that does look like young,"Phytolacca rivinoides". It should grow to a massive size. Do not eat it once it starts to get red/purple stalks/stems. There's too much toxin in them when they look red. NEVER eat any other part of the plant. Always cook them with 3 changes of boiling water. There's a lot of toxin in those.

I'd not eat anymore for about 1 week. Toxins can build up over time and cause problems. Especially, if the plant was incorrectly eaten.

OP again, just got back from the botanist. So apparently this kind of thing is more common when peeling back grass and creating a new farm patch. He said there are hundreds of seeds that lie dormant under the grass for years, and all sorts of weird stuff pops out when you expose that to sun (which is why all that other green carpet stuff is popping up).

Regardless, having now pulled one up, it's certainly some strain of pokeweed (notice the thick stem), however, the botanist said that eating some of the stems and leaves of a baby one is probably fine, but suggested we not make a habit of it.

I ordered dried amanitas online once and ate a bunch of them, those mushrooms FUCKED me up, not in a good way. I ended up taking a cold shower fully clothed as one good and one evil presence fought a violent game of tug o war with my fragile soul. This was after I finally broke out of the seemingly billion year time loop where I was paralyzed to the bed.
