I know Bandai sold MG heads that had the LEDs built inside to do what you want to. You could try and track those down, and ask the Gunpla thread.

I need help with this as well for my Gelgoog. They share the same head internals. So a method for the Zaku would work for my Gelgoog as well. I did a mono eye LED on it but it had no range on motion. Pic related.

I started to do it this way but in the middle of working on it i realized that this guys instructions are not complete. He does not mention how to wire up the smaller rod. I understand that the little rod goes through the fron pice that the LED actually moumts to and one of the LEDs leads goes through a hole to touch the small rod. Bit he never says how you attach the Wire to it. You cant just solder the wire straight to it because the part the little rod goes through not only spins but moves with the head. And their is that plate underneath it. So i have no clue. Here is the link.
