Why aren't there bike shoes with opposite direction metatarsal straps?

Also what's a decent bike shoe with a wide toe box?

There are plenty out there. I think certain road shoes, and Shimano XC series shoes will have those.

Definitely Shimano, especially M***L shoes. The Euro brands tend to have small boxes, as does Bontrager.

This one has 2 directions with its strap. They have a moldable insert too you have to heat in a pot and then stick in the shoe and fit like a mouth guard.
